The enchanting beaches of the Caribbean would probably keep you entranced for the entire trip, but on days you don't want to hit the beach, explore the Aruban Island to discover its unusual countryside and spots of natural beauty. Picturesque, with a distinct sprinkling of Dutch influence reflected in the pastel coloured Antillean architecture, Oranjestad is a freeport town bustling with activity. Known as a shopper's paradise, you'll find a duty free shop or boutique around every corner which offers everything from imported perfumes to liquor, linen, designer wear, watches, cameras - you name it and they've got it. If you're lucky and look long enough, you'll find the perfect item for the perfect price. North of Oranjestad beyond Ponton, is the village of Noord known for its famous church, Santa Anna, which has been resurrected thrice already. The present stone structure was built in 1916 by Father Thomas V Sadelhoff and is a popular spot for couples to tie the knot. The intricately carved oak altar, pulpit and communion rails were made by the famous Dutchman, Hendrick van der Geld. It is said to be the prize work shown at the Vatican council Exhibition of 1870 at which time it was in the St. Anthony's Church, Scheveningen in Holland. Beautiful, with high vaulted ceilings and stained glass windows, a visit to this church is a must. On the northern coast, lies the charming Chapel of Alto Vista that dates back to 1952. However, the history of the site stretches back much earlier, somewhere in the 18th century, when it housed the first chapel of Aruba built by the Spanish Missionary, Domingo Antonio. As you explore the Island, you'll probably catch glimpses of Mt. Hooiberg, not because of its height but because of its prominent location, right in the middle of the Island. Volcanic in origin, Hooiberg, meaning haystack in Dutch, gets its name from its unusual conical shape. Trek up the carved steps of this 545 ft mountain to view the amazing scenery, sometimes all the way up to Venezuela. It's a tiring but fairly safe climb, definitely worth the effort. The extraordinary rock formations of Casibari and Ayo, north of Hooiberg, also attract a hoard of locals and tourists. Here, piles of giant size diorite boulders have been carved into strange shapes by the movement of the wind. It is possible to climb these rock formations. Aruban Pan Bati - INGREDIENTS: 2 cups flour, 1 cup corn flour, 2 tbs baking powder, pinch of salt, sugar to taste, 1 egg, 1 3/4 cup milk, vanilla to taste. METHOD / DIRECTIONS: Mix in bowl flour, corn flour, baking pwder, salt and sugar. Add vanilla, then egg and milk, alternately. Batter the mixture until it becomes smooth (approx. 25 min). If it is not smooth enough add a little water gradually until it smoothens. Like pancakes, put the mixture on a greased pan and turn the pan bati upside down when the downside is brown or dry.
